The Thau Lagoon, a real inland sea, is separated from the Big Blue only by a thin strip of sand called Lido. It is in these places and in this natural environment without equivalent in Europe, that modern oyster farming was born almost 100 years ago. 

The shellfish farms now occupy more than 1300 ha on the water, house more than 450 farms and garnish nearly 2500 shellfish tables renowned for the incomparable flavour of their products.
